Potatoes

Makes: Four Skewers

Ingredients:

500g new potatoes

Sea salt

Put 500g of washed new potatoes with skins on in a pan of very salty water.

Boil until the water has evaporated and potatoes are cooked- keep an eye on them to make sure the pan doesn’t boil dry totally and catch.

Pour the boiled potatoes onto a pre-heated baking tray and pop into a preheated oven 200C for about 10-15 minutes to crisp up.

Serve them hot dunked into a dish of Moorish Garlic and Sicilian Lemon Aioli. Sublime.
